Winter Heirloom Beans
Heirloom beans, crème fraîche, and thyme. Great for dinner time, or anytime!
Active time: 10 minutes - Total time: 14 hours / Serves 4-6
ingredients
- 2 CUPS DRIED HEIRLOOM BEANS, SOAKED OVERNIGHT
- 2 QUARTS chicken bone broth
- 5 SPRIGS THYME
- ONE BAY LEAF
- ½ CUP crème fraîche
- ¼ CUP HEAVY CREAM
- OLIVE OIL, GARNISH
method
Bring beans, stock, thyme, and bay leaf to a simmer. Skim off foam. Reduce heat to medium-low, and simmer partially covered for 1-1 ½ hours.
Remove thyme, stir in heavy cream and simmer for 5 minutes. Stir in crème fraîche, and season with salt and pepper.
Serve with thyme leaves, and a drizzle of olive oil. Optional: sprinkle with freshly grated parmesan and a dash of smoked paprika.
