The Basics / Roasted Bone Marrow

 
Bone marrow is not a typical food in the Western diet, but it seems to be gaining popularity. Bone marrow is considered a delicacy and is generally roasted, this sacred food is not only delicious but it is also affordable. Marrow is the mostly fatty, slightly protein rich, mineral dense portion that is found inside the hard cavity of bone. It does wonders for immune support, gut health, bone health, injury recovery and insulin regulation.

  • Beef marrow bones
  • Salt of Choice
  • Cracked pepper (optional)

method

Preheat the oven to 425° F. Rinse bones under cold water. I prefer to use bones that are cut lengthwise because the surface area allows for more caramelization, and therefore more flavor, but any will do. Rub with salt and arrange on a parchment lined sheet tray.

Roast bones for 15-20 minutes depending on the size on the bones. They are finished cooking when the top is crisp and slightly golden.

Drain fat (tallow) and reserve for cooking at a later time. The bone marrow is now ready to be used in a recipe, or simply serve on toast points. It can also be stored in a glass container in the fridge for about a week. I like to keep some on hand to add to recipes throughout the week.
