Raw Fudge Ice Cream

 
Smooth and creamy, rich and satisfying chocolate ice cream. It's a favorite in our house, in fact it's a regular for breakfast with my kids in the summer! This recipe works great in silicone popsicle molds too. Homemade ice cream is so easy and you get to control the flavor and sweetness to your liking. We have our ice cream makers bowl in the freezer at all times so we are always ready to make something yummy!

ingredients

  • 2 cups homemade crème fraîche
  • ⅔ cup raw honey
  • ½ cup raw cocoa powder
  • 4 pasture raised egg yolks
  • 1 ½ Tbsp vanilla extract

method

In a stand mixer or medium bowl, whisk honey and egg yolks together until smooth. Stir in a tablespoon of cocoa powder at a time to avoid clumps and a mess.

Pour in crème fraîche and fold until smooth and consistent. Dispense into your ice cream machine, and follow instructions. Store in freezer for up to 3 weeks.
