Lime Aioli

ingredients
- 1 lime, juice and zest
- 3 egg yolks
- 1 tsp dijon mustard
- 1 tsp raw honey
- smoked paprika
- 3 parts Avocado oil
- 1 part Olive oil
method
In a food processor combine everything but the oil. Blend until combined.
Slowly, but steadily pour in oil starting with olive oil, about a ¼ cup. Over a high setting, stream avocado oil until you hear it thicken and emulsify.
Add oil to desired thickness. Refrigerate and use in recipes, or as a condiment. I like to use this on fried chicken sandwiches, or as the base of a buttermilk green goddess salad dressing.
