French Onion Chip Dip

 
Everyone's favorite bowl to stand around and stuff your face, but with real onions and cultured dairy base. There's no question why french onion chip dip has been a party staple for decades, and it's not going anywhere soon. Potato chips are the classic dipping vehicle but fresh vegetables such as carrot and celery sticks, cut up bell pepper strips, radishes, and so on are great.

ingredients

  • 3 yellow onions, or 2 lbs cipollini onions, thinly sliced & dehydrated
  • 1 cup crème fraîche
  • 1 cup curds
  • Homemade or organic worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Cayenne pepper (optional)
  • Salt, to taste
  • White pepper, to taste

method

Note: This recipe is best when made in advance. Before you start, dehydrate onions on a low setting in the oven or in a dehydrator until golden brown. It’s best when served with fresh lard-fried potato chips, but is a lovely addition to any appetizer spread.

Whisk together crème fraîche, curds, worcestershire sauce, and spices. Taste frequently, flavors can vary depending on how the cultured dairy was made. It should be salty and rich but still palatable.

Crumble in dehydrated onions, and fold into mixture. Transfer into desired jar or container and refrigerate for a night or two before serving to let flavors meld.
