Classic Apple Pie

 
You can't go wrong with classic apple pie in a sourdough crust. Using fresh ground spices makes all the difference in this recipe, it's worth the additional steps.

ingredients

  • 6-8 apples, peeled, cored and diced
  • 1 lemon, juice & zest
  • ⅓ cup arrowroot
  • ⅓ cup rapadura, or sweetener of choice
  • 1 teaspoon cinnamon, freshly ground
  • Pinch of nutmeg, freshly ground
  • Pinch of cloves, freshly ground
  • Pinch of ground ginger
  • 6 Tablespoons butter
  • 1 egg yolk
  • 1 sourdough crust

Make the crust the night before - you can find our sourdough pie crust recipe here.

Preheat oven to 400°F. In a large bowl, toss all of the ingredients (even the butter!) until well combined. Roll out the bottom crust and lightly press into the pie dish. Pour apple mixture into your sourdough crust, making a small mound shape.

Roll out the top crust, cut into lattice or desired design and cover the apples. In a small dish, beat the egg yolk with a little water and brush the crust lightly with egg wash.

Bake for 10 minutes at 400°F, the reduce heat to 375°F for 30 minutes or until golden and flaky. Serve warm with your favorite ice cream.
