Basic Chicken Noodle Soup
So few ingredients added up to so much comfort. Use the leftover chicken meat from stock to pull this recipe together in minutes. Keeps well and even better - it's GAPS legal.

ingredients
- Meat from one chicken, pulled
- 2 carrots, small diced
- 2 stalks of celery, small diced
- 1 onion, small diced
- 4 cloves of garlic, minced
- 4 Tablespoon butter
- 2 sprigs of rosemary, minced
- 2 sprigs of thyme, minced
- 1 lemon juice & zest
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 quarts chicken bone broth
- 1 teaspoon fresh parsley, minced
method
Melt butter in a dutch oven over medium heat. Add vegetables, herbs, and spices. Sweat until onions are translucent, being careful not to brown the garlic.
Once vegetables are softened, add chicken, lemon juice & zest. Season with salt and pepper. Pour in bone broth and bring to a simmer, garnish with chopped parsley and serve hot.
